“Grab your Cup and Join the Table”; in our modern world whenever we would like to discuss and decide, there is always a cup and that’s mostly coffee if not a glass of alcohol. Well, as a micro roastery, we know that there indeed many people around us who can simply join our conversation just because they cannot drink caffein. This coffee stems from the Colombian Department of Valle del Cauca (Cauca Valley,) located between the western and central ranges of the northwestern Andes. The great mountains surrounding this region are characterized by volcanic soils rich in organic matter, countless water springs, and altitudes and climate that help produce coffee of great quality and incredible mildness. 95% of the coffee in this region comes from small producers who live and work in farms of 5 hectares in size or less. Coffee is handpicked, depulped using traditional machinery and fermented in tanks before being washed and laid out to sun dry. Once the coffee is sourced, Colsuaves works with Descafecol, to have the beans decaffeinated. Descafecol uses a natural decaffeination process which combines high mountain spring water and Ethyl Acetate (EA) of natural origin. This natural EA, obtained from sugar cane, together with spring water, are the only elements used in the process. This water-EA process allows for the gentle extraction of caffeine from the beans, avoiding excessive heat or pressure, while maintaining their natural structure. The result: Colombian coffee with all its desirable characteristics, that is 99.9% caffeine-free. Coffee is handpicked, depulped using traditional machinery and fermented in tanks before being washed and laid out to sun dry. About Cristina Solis and Finca La Casa Cristina began her journey into coffee when she inherited a piece of land from her father. Her family was not involved in coffee previously and the land wasn’t in fact used for any agricultural purposes. It was when she got married, that she and her husband started working on the land for productive purposes. One of the first few agricultural products that they planted on the small piece of land was coffee. The couple quickly fell in love with their coffee plantation, and have continued cultivating it with love and passion until today. Every year, they have a small harvest from their 1-hectare coffee farm. Due to the low prices that coffee has been paying more recently, they have also diversified their farm to have a wide range of fruits and vegetables. While their 5 children don’t live with them anymore, Cristina wants to leave the coffee farm behind for them. Her dream is to ensure the sustainability of her coffee farm for future generations.

Intensity: Medium body with refreshing acidity, very sweet and fruity aftertaste. Fruity and acidic part of the coffee that you recognize at the beginning surprises you with fresh peppermint/ stevia like sparkling touch; kind of feeling when you twist the peel of a tangerine or an orange. Very light roasted; don’t let the brownish color fool you. Beans have so much sugar and those gets caramelized quickly.
